The balsamic seasoning has been crafted using a particular method a particular procedure that has been used for generations to make traditional Balsamic products with a PDO designation. The product is initially put through an acetification process in large barrels called "badesse", after which it is moved into medium-sized barrels for full maturation in order to achieve the desired harmony of flavors.
