Description
Casareccia, meaning "home style," is a pasta typical of southern Italy. The narrow, twisted rolls were originally made by hand-wrapping the durum wheat dough around a slim knife or wooden pin, and the resulting folds are perfect for holding onto sauce. Casareccia works best with rustic, chunky sauces such as a hearty meat ragú or soups like pasta e ceci (pasta with chickpeas).
