This rustic egg tagliolini comes from an ancient Langa tradition with its typical intense yellow color. This long pasta is made from phyllo dough and then cut. This special process, the consequent pasteurization, and the slow drying at a low temperature allow us to obtain a product that allows anyone to serve fresh pasta since the product keeps the consistency and color of homemade pasta. Moreover, even the cooking times are optimal: 4/5 minutes are enough to obtain the right texture.
