While this recipe is made specifically with the ingredients included in La Festa di Antipasti Box, please feel free to add your own signature twist to traditional Italian staples. Entertain your guests with canapés served with a classic bruschetta and garnished with aubergines followed by a unique Mediterranean paccheri pasta with a porcini mushroom cream.
While appetizers are delectable, the paccheri pasta with porcini mushroom cream will be the talk of the party. With two large pasta bags, this Italian dish is ideal for large gatherings.
- Salt and pepper (to taste)
- 6.3 oz of Porcini Mushrooms Cream
- 2 teaspoons of Italian Cold Pressed Extra Virgin Olive Oil
- 1 pack of Paccheri Rigati Pasta
- Grated Parmigiano Reggiano Cheese (to taste)
Bring 5 quarts of water to a rolling boil, add salt to taste. Cook paccheri pasta for 16 minutes stirring occasionally for al dente pasta. For more tender pasta, boil for an additional 2 minutes.
On the same pot, add the porcini cream pasta and bring to a medium heat for about 2 minutes. Add salt and pepper to taste and mix.
Lower to a low flame and mix the sauce with the grated parmesan cheese, Extra Virgin Olive Oil, and cooked pasta.
Use a large spoon to toss until the pasta is fully coated.
Serve warm and sprinkle your desired amount of cheese to garnish as a last touch.
